Mom served fresh eggplant from our garden. Hers was breaded and fried like the fish Dad regularly brought home. I didn't know eggplant was a vegetable until I was 18. Sheltered???
2 slices of eggplant sauteed or browned in Coconut Oil
2 slices of Jarlsberg cheese
1/2 cup of pico de gallo
kosher salt and coarse ground pepper to taste
