Thoughtful use of leftovers. I had planned to have the meat and veggies at lunchtime but they looked so good I just fried up a new batch of cabbage and added last night's dinner to it. Extremely tasty and a good start to the day.

Mom Cooks

Yesterday I made a pot of white bean soup. Package of beans, 1 can of diced tomatoes, 1 can of diced green chiles, onion, mushrooms, smoked ham shank, cumin, cilantro and Goya's Adobo seasoning. They are extremely good.

Today I baked 2 quiche. 1 shrimp and 1 broccoli, mushroom and green onion. We ate the broccoli quiche for brunch.

Mother's Day 2009


We celebrated a week late and since it was HSU Graduation night did not have all that many choices for where we could get reservations. I had Roast Duck with Cherry sauce at The Sea Grill in Eureka. Karin and Leticia had Crab and Shrimp Stuffed Petrale Sole. A very busy place with slow service (crowded) but the food was excellent.

Shopping Conservatively

Ray's is having a Meat Bonanza but since I'm not really eating much meat anymore I haven't bought any. I did buy a whole salmon, a ham slice, a Corned Beef Round Roast. Macaroni and cheese, a Tuna Wrap, Orange Juice and Cottage Cheese. Bananas are my only fruit for now.

I am a Vegetable today


The new Stove was installed today and I plan to roast some veggies. I bought brussels sprouts, red potatoes, a poblano pepper, squash and carrots. I'll add onion and yams from the stash. I am also sauteing fresh spinach as an appetizer. Need to run to the store first to find some olive oil and vinegar since I haven't located them yet.

Diet Choices Haven't Been All That Good

For the past week I've made do with whatever food presented itself. From Burgers to Pizza, Soup to Baked Ham. Convenience food from the market.

Today the Fridge was delivered. I now have fresh veggies to choose from. No plans for tonight except for some Greek Yogurt and possibly some steamed or sauteed spinach. Still no sink so cooking's not all that pleasant.
