Discovery Day
It's been a great lite eating day.
Breakfast was a leftover salad.
Lunch was toast and beans.
For dinner I will try this discovery.
The Jambalaya was salty but very well spiced and delicious.

A bowl of stewed plums with Vanilla Bean Ice Cream
Then I got started on a plum crisp for breakfast tomorrow!

Hot dogs and salad
Plum Salsa on Ball Park Angus Beef Franks
Avocado on Wheat Walnut Sourdough
Mixed Green Salad with Balsamic Vinegar
My Lunch Today
What's on Hand
Plum preserves on artisan sourdough served with 4 pitted plums that lent their flavor and nutrients to the Sun Tea.
Portion Control in mind this morning.
Plum Preserves
I spent hours for a yield of a scant 3 pints. It was worth it.
Another 12 cups of pitted plums are steeping in sugar as I prepare a 2nd batch of plum preserves. This next batch will be special in regards to seasoning. Pictures to follow.

More Plums
Froze 3 more quarts of plums as the preserves simmered on the stove top.
Then I made a gallon of plum flavored sun tea.

A Hearty Start
Biscuits and gravy: creamed salmon with peas
Plum smoothie with multi grain oats and kefir
A taste of home, except my white sauce is made with cornstarch and the fat is provided by half and half. A 6 ounce can of Wild Alaskan Salmon in 2 cups of sauce with a handful of petite peas and onion made 3 meals.
