Strange Appetite Today

This morning I was craving fiber. I struggled and kept my hand out of the nut jar. By the time I could eat, however, I had no interest at all in food. I finally fixed some bread and butter and some steak fries. I will settle for some fruit and yogurt as my main course tonight.

Liquids Today

Last day before the medical procedure and I'm on a liquid diet. How many glasses of Apple Cider can one person drink?

For lunch I will have Chicken Broth. I might go find some hard candy to suck on.

Oaxacan Eggs with Smoked Ham

Not the best presentation but you get the idea.
Yesterday I watched a Oaxacon Festival where they fixed a traditional dish. It was Eggs with Chicken, fixed with Chicken Broth in quantities to feed 50 couples and children.

The chicken was boiled and deboned creating a chicken stock. Whole eggs were then whisked with the shredded chicken added, a bit of cumin and chilis. The mixture was then poured into the boiling chicken stock and stirred with a paddle until the eggs setup. A gourd dipper was used to fill the cereal bowls with the setup eggs and chicken mixture garnished with 1/2 red pepper filled with chili sauce.

I had to try it, but instead of chicken I used smoked ham. I wasn't sure of quantities and only had Reddi Egg in the fridge so I improvised. I'm not sure I would make it again but I ended up with a cereal bowl full of 'scrambled' eggs and a cereal bowl of egg flower soup after straining the eggs.

No Fruit, Veggies or Whole Grains

Boy do I feel deprived!!!

And should I feel that way? About 2 years ago I shifted to a high fiber diet and it really seems difficult to not eat those foods for 4 days.

For breakfast I managed a cup of yogurt and 2 fresh baked biscuits with butter. Certainly enough FOOD - just not the kind my body expects to process.

I'm already thinking ham and eggs later today. Now might just be the time to fix that rack of lamb. Always a favorite and I'm sure I can find something fiberless to go with it.

Why not have a cup of tea and kwitcherbitchin?

Veggies and Acceptable Protein

Tonight's dinner. I had to cook up the fresh squash since the diet will be fiberless for the next 3 days. I ended up with 2 zucchini and a yellow squash roasted in the oven and served with 2 pan grilled Chicken Italian Sausage. I even soaked a Crushed Wheat Sourdough Roll in the juices.

Could be a Vegetarian Day

This morning I roasted a yellow squash, zucchini, yellow onion and a portabella mushroom. I'm thinking roast vegetables with tomato soup and Crushed Wheat Sourdough rolls for my lunch.
I wasn't home for dinner and veered off the path toward red meat as I stopped at the Charburger in Cascade Locks. I tried their Surf and Turf which was passable. My recommendation: Stick with a Restaurant's specialty. Much safer and predictable results.

Vegetarian Lunch

Steamed Potatoes and Steamed Brussels Sprouts dressed in a Lemon Dill sauce from Trader Joe's formed the basis of lunch today. As a bow to fat and protein I added a hard boiled egg. I feel a soup coming on for my dinner. Perhaps I'll try the Beef Barley.

Wild as the Salmon

Valentine's Day dinner at the Thai Lotus. Not bad, but I wouldn't go back. Slow service as the crowds began to arrive. I suppose I should be thankful they gave us time for conversation after dinner.

Paula Deen's Toaster

I tried out the new toaster this morning. I poached an egg with slices of Hickory Smoked Ham in the tray above the egg and 2 slices of Sesame Sourdough in the Toaster part. The egg didn't cook as sufficiently this time. No more steaming of meat, I didn't much care for it anyway.

Soup today. 1Can Cream of Tomato Soup, 1Can Chicken Broth, 1Can Diced tomatoes, 10 Teaspoons Fresh Mozzarella chunks, 8 Turkey Meatballs. This 'soup' makes 3 generous meals for 1 person. And you certainly get your one serving or more of tomato product for the day.

Change in Dietary Plan

2nd day of Prep for the Colonoscopy and I've come down with a wicked cold. I'm rescheduling and medicating and plying my system with proper nutrition to fight the cold.

Today Starts the Special Diet

For the next 3 days I am preparing for a medical procedure. Today is the 1st day of the Fiberless portion of the diet. I had biscuits and butter with a cup of coffee as my breakfast. That Kiwi looks so good I have to keep slapping my hand.

At lunch I ladled out freshly made chicken stock, even strained the meaty bits for whatever reason, then I spotted the box of Instant Mashed Potatoes. Sounded and tasted really good until I realized I'd eaten 4g of fiber out of carelessness.

I can eat a grilled cheese sandwich as long as I cut the crust off the Sesame Sourdough.

I had not realized how much of my regular diet is filled with fiber. This is making the choices very difficult for me. I do have plenty of the chicken broth though and since I have come down with a cold it's the perfect day for it.

Hablo Espanol. Y tu?

I have eaten so many helpings of Chile Verde the last couple of days I have developed a craving for Mariachi music! I made a crock pot full using a boneless Pork shoulder and a bottle of Herdez Chile Verde Salsa. It goes well over brown rice and today will become the base for my split pea soup. Who knows? Hit or Miss? Time will tell.

Celebrating the Superbowl

What a day this has been!

I started with a toasted English Muffin followed by poached eggs on chili for a late brunch.

Dinner was 2 Hebrew National Beef Franks during half time.

I've also had a banana and a Klondike Bar. No holds barred for today.
